From the method

How a Munchoro Churro Starts

Seven steps, the same every batch since one tabletop fryer at the Saturday morning market in 2016. Here are the first three, in Marisol's words.

  1. The Boil

    250ml

Water, 30 g of butter, 6 g of sugar and a pinch of salt, brought to a proper rolling boil. That is my grandmother's ratio, and there is no egg in it.

  2. The Flour

    150g

Pan off the heat and all the flour in at once. Then 90 seconds of beating until the dough leaves the sides of the pan clean.

  3. The Rest

    12min

On the bench until it drops to about 140°F: warm enough to pipe, cool enough to keep its ridges.
